Wren Song Summer Salad: Cool, refreshing, hearty

Salad’s easy to make in minutes and will satisfy the heartiest man-sized appetite – or just eat a little for healthful snack – it’s versatile.

You’ll need:

one cup chopped celery
one cup chopped iceberg lettuce
half cup chopped parsley
one can artichoke hearts drained and rinsed
one can black olives pitted
one cup cherry tomatos ( or as much as you like)
one cup chopped cucumber
four ounces of feta cheese crumbled
one tablespoon good dried italian spices( basil oregano sage marjoram rosemary thyme)

mix gently in a large bowl. drizzle with olive oil. stir gently again. Squeeze one half lemon over salad.
add salt and pepper if you like – i recommend a a good himalayanp pink sea salt), otherwise table salt will work.

serve immediately. serves four.
